This week in booze

Things I learned this week:

1. Jeff “Beachbum” Berry’s Grog Blog features a post titled “Monks + Drunks x Sisterhood = the Pago Pago Cocktail.” It seems Berry made the acquaintance of some of the ladies of LUPEC Boston (that’s the Boston chapter of Ladies United for the Preservation of Endangered Cocktails) a couple of months ago when he was in town for the Sippin’ Safari. He became intrigued by the cocktails that LUPEC Boston and drinkboston.com created for a Chartreuse event at Green Street back in August.

“Inspired by LUPEC Boston’s creations,” writes the tiki guru, “we combed through our cocktail library in search of vintage tropical drinks that call for Chartreuse. In a 1940 book entitled The How And When, we finally found a good one: the Pago Pago. To make it, place 1 ounce of diced fresh pineapple in your cocktail shaker, then muddle the pineapple in 1/2 ounce fresh lime juice. Add 1/4 ounce white creme de cacao, 3 teaspoons green Chartreuse, and 1 1/2 ounces gold Puerto Rican rum. Shake well with ice cubes and strain into a cocktail glass.”

I have only tasted this drink in my mind, but it’s one of the most delicious imaginary cocktails I’ve ever had. I vow to mix one up for myself soon.

2. Blackberrying me from the bar at KO Prime, a friend of mine made me aware of the steak house’s “Retro Sundays.” He said he and his wife were drinking Pink Squirrels (creme de noyaux, creme de cacao and cream). Apparently, the bartenders robe up like Hugh Hefner, Chef Jamie Bisonnette parades around in a cartoonish toque, and the dinner menu includes old-school steak house specialties like all-you-can-eat prime rib, Oysters Rockefeller and shrimp cocktail. Cool.

3. Meanwhile, speaking of old-school … over at the Independent, bartender Evan Harrison is dreaming up a special menu of “cheap scotch cocktails.” It seems the bar has a surplus of Cluny blended scotch on hand (in 1.5 liter plastic bottles of course), and, well, Evan’s going to do his own version of your grandfather’s night out. I took a sniff from the Cluny bottle during a recent visit, and it smelled like … it smelled like the first time I ever smelled whiskey: dangerous and slightly sickening. I’m anxiously awaiting that menu. (Oh, and by the way, Evan also re-did the Indo’s website, and I think it looks damn cool.)

Absinthe – still criminal?

Absinthe GuyUnless you haven’t picked up a newspaper recently, you know that absinthe — the strong, licoricey liqueur with the naughty reputation — is once again legal in the U.S. after a long ban beginning in 1912.

All the articles I’ve read about the spirit and its newly legit status seemingly rummaged through the same musty steamer trunk full of anecdotes and phrases associated with the Green Fairy: the supposed hallucinogenic, madness-inducing effects; the Belle Epoque and its absinthe-drinking artists, particularly the troubled ear slicer Van Gogh; the Swiss man who sparked the ban of absinthe in Europe by murdering his family while drunk on absinthe in 1905; the word “louche,” which originally referred to the cloudiness that forms in the beverage during the ritual of dripping ice water slowly into the glass. All of the articles quote the chemist and absinthe historian Ted Breaux, who consulted on the creation of Lucid, the first absinthe on the American market. And they all employ that nonchalant tone newspapers use when reporting the latest craze over something controversial.

The story behind absinthe is indeed interesting, but, honestly, I felt like I’ve read the same article about seven times. Until I saw the one that Salon published this week: “Everything you know about absinthe is wrong.

“Let’s clear up a few misconceptions,” says the writer, Sarah Hepola. “Absinthe does not make you hallucinate. It is not wildly addictive. It will not cause you to lop off your ear, unless (possibly, on the off-chance) you are a deeply disturbed painter racked by poverty, heartbreak and mental illness. Rather, absinthe is a good drink.” Strip away all the “lore and illegality,” she argues, and what you actually have is a damn fine, complex beverage that deserves a place in the world of legal spirits.

But the lore and the lingering whiff of illegality are, of course, precisely why people are lining up at bars to order absinthe and take part in its peculiar serving rituals, with their slotted spoons, sugar cubes and fancy ice water fountains. And they’re why the new absinthes on the market cost $60-$75 per bottle. Sure, distilling a good quality absinthe takes knowledge and skill. But that’s true of a lot of herb-based spirits — green Chartreuse comes to mind. Its strength is similar to that of absinthe, it has been rumored to have mind-altering properties, and its complex recipe requires the distiller to be meticulous. But at around $35-$40 per bottle, it seems a relative bargain.

Jared Gurfein, president of Viridian Spirits, which produces Lucid, says in the Salon article, “We’ve sold thousands more cases than expected. There is a huge interest in absinthe. Unbelievable.”

Cashing in on hype over a product, whether that product is good or bad, is nothing new. But I would say to today’s absinthe drinker: if you don’t realize that hype is what you’re paying good money for, you must be hallucinating.

Monks make it, we shake it

I’m guessing that when the monks of the Order of Chartreuse created their “liqueur of health” in 1737 they never imagined that, three centuries later, mixed-drink enthusiasts in the New World would gather at a Chartreuse cocktail party thrown by a group of debauched dames called Ladies United for the Preservation of Endangered Cocktails.

That’s precisely what went down at Green Street in Cambridge last night. Drinkboston.com joined the Boston chapter of LUPEC to celebrate the herbaceous Chartreuse liqueur and the evocative elixirs that result when you mix it with, oh, gin and cucumbers. We served up two old-school Chartreuse cocktails and two new-school Chartreuse cocktails (see recipes below) while a monkishly robed local bartender and drinks historian bestowed his knowledge and blessings on those gathered.

Misty Kalkofen, Green Street bar manager and president of LUPEC Boston, and her fellow Ladies (who all go by aliases that are names of drinks) created two new cocktails specifically for the event. One of them, the Irma La Douce, was a winner in Salon.com’s recent cocktail contest. It and the other featured cocktails were shaken to perfection by the Ladies and were damn tasty. Proceeds from the event got LUPEC started on its mission to throw co-ed cocktail events that raise funds for local women’s charities. The Can Can (created by LUPEC Boston)
5 sour cherries
1 oz yellow Chartreuse
.25 oz fresh grapefruit juice
1 dash Angostura Bitters
sparkling wine
Muddle the sour cherries in a mixing glass. Add the Chartreuse, grapefruit juice, and bitters. Shake with ice and strain into a flute. Top with sparkling wine. This drink’s name is inspired by its peppery kick.

The Irma La Douce (created by LUPEC Boston)
1.5 oz Hendrick’s gin
.5 oz green Chartreuse
.5 oz fresh cucumber puree (peel and blend cucumber, then pass through a sieve)
.5 oz fresh lemon juice
.5 oz grapefruit juice
.25 oz simple syrup
Shake all ingredients with ice and strain into a chilled cocktail glass. Garnish with a slice of cucumber. (Don’t want to make a puree? If you’re making this cocktail for one or just a few guests, you can just muddle a few slices of peeled cucumber in a shaker.) A green French liqueur + a movie in which Shirley MacLaine plays a Parisian prostitute dressed in bright green stockings = a drink called the Irma La Douce.

The Champs-Elysees
1.5 oz brandy
.75 oz yellow Chartreuse
.75 oz fresh lemon juice
1 dash bitters
Shake all ingredients with ice and strain into a chilled cocktail glass. This vintage drink is on the regular cocktail menu at the B-Side Lounge.

The Scoff Law
1 oz rye whiskey
1 oz dry vermouth
.75 oz fresh lemon juice
.75 oz green Chartreuse
2 dashes orange bitters
Shake all ingredients with ice and strain into a chilled cocktail glass. This drink, according to Ted Haigh’s book Vintage Spirits & Forgotten Cocktails, was invented at Harry’s New York Bar in Paris and “hilariously baited Prohibition sensibilities (the term originally referred specifically to a frequenter of speakeasies and general flouter of the National Prohibition Act).” Another version of the Scoff Law calls for real pomegranate grenadine instead of Chartreuse. Both cocktails are terrific.

Chartreuse sneak preview on Salon

One of the Chartreuse cocktails that the boozin’ broads of LUPEC Boston created for Sunday night’s Chartreuse Cocktails event at Green Street is a winner in Salon.com’s first summer cocktail contest. Congrats, ladies! LUPEC is Ladies United for the Preservation of Endangered Cocktails, and the Boston chapter’s blog is here. The winning cocktail’s called the Irma La Douce. “Take a green French liqueur and a movie in which Shirley MacLaine plays a Parisian prostitute dressed in bright green stockings — and it adds up to a cocktail called the Irma la Douce,” the article reads. One Salon taster described the drink as “spicy and tart, like its namesake.” Santé!

Chartreuse Cocktails at Green Street 8/19/07

Green ChartreuseDrinkboston.com will join boozy forces with the recently founded Boston chapter of LUPEC (Ladies United for the Preservation of Endangered Cocktails) on Sunday, August 19 to host Chartreuse Cocktails at Green Street in Cambridge. The event starts at 7:00 p.m. (More on LUPEC Boston below.)

Chartreuse, the brilliant green, 110-proof spirit made by Carthusian monks in France and flavored with 130 herbs and other botanicals, is perhaps the noblest of liqueurs. If you’ve had Chartreuse, you know that nothing else tastes quite like it. How do you even begin to describe its bright, herbal complexity? You don’t. You just mix it into a cocktail and admire the distinctive result. At the Green Street event, you’ll taste cocktails made with green Chartreuse, described above, and its sibling, yellow Chartreuse.

On the menu: Two classic Chartreuse cocktails and two new-school Chartreuse cocktails, the latter created exclusively for this event by members of LUPEC Boston. Passed appetizers with fresh, in-season ingredients will accompany the drinks. But wait, there’s more:
