i've always been under the impression real french 75's were with gin but it only got perverted after the 1970's....

many people think it was named after the color which leads people to cognac....but i had also read that the very origional is made with a rinse of absinthe and then calvados and champagne which was named because of the similiar color of the 75's shell casing....

i make mine with gin...when your proportions are perfect you can't tell where the gin tingle stops and the bubbles begin and thats what it is all about...the tiny amout of sour helps bridge that junction....

i think i'm gonna go make one....cheers!
